Mary Jane's Crochet: Recipe - My Favorite Macaroni and Cheese

My Favorite Macaroni and Cheese
Serves approximately 12 people; if doubled it will serve maybe 25 or more

½ cup chopped red or green pepper
¼ cup chopped onion
2 Tb. butter
1 lb. Velveeta cheese, cubed
½ cup evaporated milk
1 one lb. box macaroni (any shape) cooked and drained
¼ tsp. white pepper

Preheat oven to 350 degrees. Saute vegetables in butter till tender. Reduce heat to low; add cheese and milk, stirring until cheese is melted. Stir in macaroni; spoon into a casserole dish. Bake 15 minutes. Sprinkle with cheddar, montery jack or colby cheese if desired.

Note: You may want to add more milk if you want this dish to be creamier. I usually double the recipe for Christmas or Thanksgiving. Also you can put this in a dutch oven or crock pot and just heat it that way, without having to put it in the oven. It can stay warm that way too, if you have your stove top and oven full!
