Bacon Pasta Salad
1 Box Rainbow Rotini Pasta (or bowtie pasta)
1 Bunch Fresh Broccoli, chopped
1/2 head Fresh Cauliflower, chopped
1/2 red onion (or sweet Vidalia)
3 cups shredded Mozzerella cheese
1 Lb. Bacon, fried crisp, and crumbled
Sauce:
1-1&1/2 Cups Hellman's Mayonnaise
3/4 - 1 cup sugar
3-4 Tb. vinegar
Prepare pasta according to package directions. Mix all salad ingredients in large bowl. In another bowl, mix salad dressing ingredients together, and pour over salad. Refrigerate. I usually wait to add the bacon right before serving, so it will stay crisp. Delicious! This is always a big hit!
